Curry Dressing

This is from Toni Fiore’s Totally Vegetarian.  She suggested it on beets, asparagus, baked potatoes, or any veggie.  I used it as a raw veggie dip.

Whisk in a small bowl:

  • 2 T soy yogurt
  • 2 T vegan mayonnaise
  • 4 t curry powder
  • 3 T lemon juice
  • 1/2 c olive oil

Add and combine:

  • 2 cloves garlic, mashed and minced
  • 4 T chopped cilantro

It is a little harsh at first – let sit 30-60 min.
