Pesto

This is adapted from Vegan Planet by Robertson.

Process in a food processor:

  • 2 cloves garlic, peeled
  • 1/3 c nuts, toasted (try pine nuts, almonds, walnuts)
  • 1/2 t salt

Add:

  • 2 c loosely packed fresh basil (this was most of a hydroponic plant) (or try mint or parsley)

With the machine running, slowly add:

  • 1/4 to 1/2 c extra virgin olive oil

Will keep in the fridge several weeks.  Robertson suggests storing with a thin layer of olive oil to keep the basil from discoloring.
