Butter Beans with Sweet Potatoes and Greens

Mexican Rice, Salad, Butter Beans with Sweet Potatoes and Greens

This is from The Complete Idiot’s Guide to Vegan Cooking by Bennett and Sammartano.

Saute in large skillet over med heat 3 min:

  • 1 lg sweet potato, diced
  • 1 c red onion, cut into quarter moons
  • 1 T olive oil

Add and saute 1 min:

  • 1 T garlic, minced
  • 1/2 t dried thyme (or about 2 t fresh thyme, minced)
  • 1/2 t crushed red pepper flakes

Add and simmer on low until potato is almost tender, 5-10 min:

  • 1/2 c water

Add and simmer until greens are cooked:

  • 1 bunch greens, chopped
  • 1 lb. can butter beans, drained
  • 1 t soy sauce
  • 1/4 t salt
  • 1/4 t pepper
