Curried Couscous

Tomatoes, Curried Couscous, and Turnip Greens

This is from The Complete Idiot’s Guide to Vegan Cooking by Bennett and Sammartino.

In a medium saucepan over high heat, bring to a boil:

  • 3 c water
  • 1 T curry powder
  • 1 t salt
  • 1/2 t pepper
  • 1/2 t ground cumin

Add and cook 1 min:

  • 1-1/2 c whole wheat couscous

Let sit 5-7 min, until water is absorbed.  Fold in:

  • 1/2 c chopped red bell pepper
  • 1/2 c frozen peas or cooked chickpeas
  • 1/2 c pistachios or other nuts, coarsely chopped

Let sit 3 min.  Fluff and serve.
