Curried Lentils

Curried Lentils

This is from The Complete Idiot’s Guide to Vegan Cooking by Bennett and Sammartano.  It didn’t taste much like curry, but was good, and pretty quick (35 min) for being based on dry legumes.

Saute in 1 T olive oil 5 min:

  • 2/3 c onion, diced
  • 2/3 c carrot, diced
  • 2/3 c celery, diced (I substituted cauliflower florets)

Add and saute 1 min:

  • 1 T garlic, minced
  • 1 T curry powder
  • 1 t cumin
  • 1 t thyme
  • 1/4 t pepper
  • 1/4 t cayenne

Add and boil, then simmer 20 min:

  • 1 c dried brown lentils
  • 3 c water

Add and simmer 5-10 min:

  • 4 c chopped greens (I used kohlrabi greens)
  • 2 t tamari

Salt to taste.  Serve over rice or pasta.
