Indian Lentils with Sweet Potatoes

This is adapted from Jay Solomon’s 150 Vegan Favorites.

In a large saucepan on medium-high heat, fry until browned:

  • 2 t canola oil
  • 1 medium onion, finely chopped

Turn heat to low and add:

  • 2 cloves garlic, minced
  • 2 t minced fresh ginger root
  • 1-1/2 t curry powder (spices)
  • 1 t ground cumin
  • 1/4 t turmeric
  • 1/2 t pepper

After 1 min add and bring to a boil:

  • 4 c water
  • 1 c red lentils

Simmer uncovered 15 min, and then add and cook 30-40 min:

  • 2 c diced sweet potato

When lentils and potatoes are tender, stir in:

  • 1/2 t salt

Serve over brown rice and/or with Pita Bread.
