This is adapted from Isa Does It by Moskowitz.  Delicious comfort food.  Serves 4.

Boil about 30 min, until tender, and set aside:

  • 3/4 c raw lentils

Boil according to package directions, then set aside:

  • 1/2 lb. whole wheat fusilli

Blend in a blender until as smooth as you can get:

  • 1/4 c raw cashews which you have optionally soaked for 2 hours (any time is better than no time)
  • 1/2 c veg. broth

Meanwhile, saute in a large saucepan, 3 min on medium heat:

  • 1 T olive oil
  • 1 small onion, chopped

Add and saute 30 sec:

  • 2 cloves minced garlic

Add and saute 30 sec:

  • 1 t dried thyme
  • a grind of black pepper

Add the lentils, mix, and mash a bit.  Add, mix, and heat:

  • 14 oz. canned crushed tomatoes
  • the cashew mix

Add the pasta, reheat, and serve.
