Marinated Italian Tofu
This is fromVeganomicon by Moskowitz and Romero. My kids loved it as is; I thought it was a bit dry on its own but terrific when I merged it with my salad. Serves 4.
Press:
- 1 pound extra firm tofu
Meanwhile, make the marinade:
- 1/2 c white cooking wine
- 2 T olive oil
- 2 T balsamic vinegar
- 2 T soy sauce
- 2 T fresh lemon juice
- 2 cloves garlic, smashed
- a big pinch each of dried basil, marjoram, and thyme
Cut the tofu into 8 slices and marinate 1 hour. Preheat oven to 400. Place the tofu on a baking sheet and bake 20 min, flip, then bake another 10 min. Run the broiler for the last two minutes to increase chewiness.
