Mexican Rice

Mexican Rice, Potato Leek Soup, King Cabbage, and Sauteed Broccoli Rabe

I veganized this from some magazine decades ago.  Once you have the ingredients cooked, it comes together in a snap, and is very filling.  Serves 6-8.

Have ready:

  • 1 c (raw) brown rice, cooked in broth, or 2 c cooked rice
  • 1 c cooked chickpeas (see beans)

Saute until onions are translucent:

  • 1 T oil
  • 1 small onion, chopped
  • 1 sweet pepper, chopped

Add rice, chickpeas, and:

  • 1 can corn
  • 1 c mild salsa

Heat and serve with hot sauce.
