Notuna Sandwich

This was adapted from Total Health for you and your Family the Vegetarian Way.  Serve it in a sandwich with lettuce and tomato.  Sometimes I make this with black soybeans instead of chickpeas (I find them canned in the health food section).  It looks and tastes so much like a sardine sandwich I find it a bit unnerving.

  • 4 c cooked chickpeas (I use dry and cook them – see beans)
  • 1/4 c chopped celery
  • 1/2 c chopped onion
  • 2 T lemon juice
  • 1/2 c or less nayonaise
  • 1 T powdered nori
  • salt & pepper

Mash chickpeas.  Add other ingredients, adjusting to taste.
