Orzo and Sweet Pea Pilaf

Orzo Pilaf, Kale, and Tofu

This is adapted from 150 Vegan Favorites by Solomon.  I turned it whole grain.  Serves 4.

In a medium saucepan on medium heat, sautee 5 min:

  • 1 T olive oil
  • 1 medium yellow onion, chopped

Add and saute 1 min:

  • 2-3 cloves garlic, minced
  • 1 c brown rice
  • 1/2 t salt
  • 1/2 t pepper
  • 1/4 t turmeric

Add and boil then simmer 30 min:

  • 2-3/4 c water

Add and cook 5 min:

  • 1/4 c whole wheat orzo (rice-shaped pasta)

Add and cook 3 min:

  • 1 c peas, fresh or frozen
  • 2 T chopped parsley, fresh or frozen

Remove from heat, fluff and let stand 5 min.
