Palak Tofu

This is adapted from The Accidental Vegan by Gartenstein.   I ignore her minimal directions and instead do what an Indian woman once told me to do to make curry.  This recipe probably makes enough for 3 people.

  • 1 T oil (I use canola)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tomato, chopped
  • 1 T grated ginger
  • 1 t ground cumin* (spices)
  • 1/2 t ground turmeric*
  • 1/2 t ground coriander*
  • 1/2 t ground cardamom*
  • salt to taste
  • cayenne to taste
  • some greens.  I used 3 stalks of swiss chard.
  • 1/2 lb. firm or extra firm tofu, cubed or sliced thin, pre-microwaved

Heat the oil in a large frypan on medium-high heat.  Fry the onions several minutes until brown.  Turn the heat down to low and add all the ingredients except the greens and tofu.  Cook for several minutes.  The tomato will disintegrate and the whole thing should start to look like a paste.  This is your homemade curry paste.

Add the greens and tofu and cover the pan.  Cook until the greens are tender.  Toss everything and serve with rice.

* You might be able to substitute curry powder for the total amount of these, but I’m not sure.
