Penne with Swiss Chard

This is adapted from 150 Vegan Favorites by Solomon.  Serves 4+.

Start water for 8 oz. pasta boiling.

In a large frypan saute on medium heat 5 min:

  • 1 T olive oil
  • 1 medium onion, chopped

Add to the boiling water and cook according to directions:

  • 8 oz. whole wheat penne pasta

Turn frypan to low and add:

  • 2-3 cloves garlic, minced
  • 1 medium bunch Swiss chard, sliced into ribbons.  I use the stems, too.
  • 1/2 t pepper
  • 1/2 t salt
  • 2 T fresh lemon juice

When pasta and greens are cooked, add pasta to the frypan and toss.  Add some olive oil if more “sauce” is needed.   Serve with Tabasco!
