Sesame Edamame with Pasta

Roasted Green Beans & Sesame Edamame with Pasta

This is adapted from Anne Palumbo as published in the Messenger Post.

Microwave 4 min and set aside:

  • 12 oz. shelled edamame

Start the pasta water and make the dressing.  Whisk together in a small bowl:

  • 1 T sesame oil
  • 1 T soy sauce
  • 1 T rice vinegar
  • 1/2 t agave nectar or sugar
  • 1/4 t black pepper
  • 1/2 t salt
  • 1/2 t red pepper flakes (optional)

In a large frying pan, saute on medium 2 min:

  • 2 t sesame oil
  • 3 cloves garlic, minced
  • 1 T fresh ginger, minced

Add and saute 4-5 min more:

  • 1 red pepper, julienned

Turn frying pan heat to low.  Cook according to directions:

  • 8 oz pasta (whole wheat spaghetti or linguine, or soba)

Drain, toss thoroughly with dressing, and top with pepper mix and the edamame.  Garnish with toasted sesame seeds.
