Slow-Cooked Ziti Casserole

Slow-Cooked Penne

This is slightly adapted from Fresh from the Vegetarian Slow Cooker by Robertson.

Saute 5 min on medium-low in a small to medium frypan:

  • 2 T olive oil
  • 1 large onion minced

Add and saute 30 seconds:

  • 2 cloves garlic, minced

Add, cover, and cook on low 3-1/2 hours:

  • 28-oz can crushed tomatoes
  • 1 c water
  • 1/2 c TVP (optional, she called for frozen burger crumbles but you could probably skip this)
  • 1/2 c dry red wine
  • salt and pepper

Twenty-to thirty minutes from the end, stir in:

  • 8 oz. whole wheat penne, ziti or other tough pasta, cooked

A few minutes before serving, stir in:

  • 1 T fresh or frozen basil
  • 2 T fresh or frozen parsley

You can use 1/3 as much dry herbs; add them when you add the tomatoes.

We served this with Cashew Parmesan.
