Spicy Lentil Loaf
This is from The New Farm Cookbook as related by “Confessions of a Vegan Virgin.” It was really good! Takes about 2-1/2 hrs, serves 4.
Cook in a large saucepan in 3-1/2 c water:
- 1-1/2 c green lentils
This will probably take 40-60 min. All the water should be absorbed and lentils should be soft. Use a large saucepan and you can mix everything in it afterwards.
At the same time, cook in a small pot in 1-1/2 c water:
- 3/4 c brown rice
Saute in oil or water in a small frypan:
- 1 large onion, chopped
- 1 clove garlic, minced
Combine all ingredients with:
- 1/3 c salsa
and spices to taste. I used:
- 1 t salt
- 1 t cumin
- 1 t chipotle powder (could use chili powder instead)
Press into an oiled loaf pan. I used a smaller loaf pan, 8.5 x 4.5 x 2.5 and it fit very snugly, but you could also use a larger bread-sized one. Top with:
- another 1/3 c salsa
Bake 1 hour at 350.
At the table, I topped mine with chipotle Tabasco; my Dad dumped about a cup of salsa on his.
