Spicy Pinto Beans

Corn Sticks, Brown Rice, Spicy Pinto Beans

This is from Secrets of Fat Free Cooking by Woodruff.  Serves 8.  It isn’t particularly spicy – you might like to ramp up the spices.

Combine in a 3 qt. pot, add water just to cover, and boil then simmer 1-1/2 hrs until beans are soft:

  • 1 lb. (2 c) dry pinto beans, soaked (see beans).
  • 1 med onion, chopped
  • 1 t crushed garlic
  • 2 t veg bouillon paste (or one 2-cup cube)
  • 1-1/2 t ground cumin
  • 2 t chili powder

Add and cook 30 min:

  • 2 tomatoes, diced
  • about 1 t salt, to taste

Serve over brown rice topped with fresh cilantro or scallions.
