Sweet Potato Stew and Brown Jasmine Rice

Sweet Potato Stew and Brown Jasmine Rice

This is from Toni Fiore, of Totally Vegetarian.  I put it under entrees because I served it on a plate over brown jasmine rice.

Heat olive oil over medium-low in a large pot.  Add:

  • 2 c diced onion
  • sprinkling of salt to help sweat the onions

Cover and let cook while you prepare the veggies:

  • 2 sweet potatoes (6-7″ long), peeled and diced to 2″ (which is pretty big)
  • 1 jalapeno, minced with seeds (optional)
  • 1-1/2 T minced fresh garlic, skin and all
  • 4 cloves garlic, minced

Add the veggies to the pot, and then:

  • 1 t ground coriander
  • 1/2 t turmeric

Cover and cook 3-4 min.  Add and bring to a boil:

  • 1 can coconut milk, any style
  • 2 c water (You may want to hold back some of the water to see if you want it)

Prepare and then add:

  • 1 bunch (looked like about 4-5 leaves) greens, any kind, chopped.  She used swiss chard, I used collards.  We both removed the ribs, though with swiss chard I would probably not have done that.  She ended up with about 1-1/2 qts chopped.

Cook 10-15 min, just until greens are tender.

She plated this in a wide shallow bowl, with quinoa pilaf on the side.
