Black Beans

Black Beans, Cumin Rice, and Salad

This is pretty plain, and can be used on top of rice, in a burrito, or as a side dish.  Similar to Southwestern Black Beans only this recipe is meant to be made from a smaller amount of already cooked or canned beans.

Fry in oil on medium heat in a medium saucepan:

  • 1/2 onion, diced

Just as it’s beginning to brown, turn to low and add:

  • 1 clove garlic, minced
  • 1 T chili powder
  • 1/2 t cumin
  • 1/2 t oregano

Saute a minute and add:

  • 2 c black beans (cooked, frozen, or canned, drained)
  • 1/2 t salt
  • 2 T cilantro
  • 1 T cider vinegar

Heat up, and cook off the liquid if you want it drier.

Terrific with Chipotle Tabasco.
