Cajun Cauliflower

This is from Paul Prudhomme.

  • 2 c cauliflower florets (I just chop the cauliflower pretty small, 1/2″ – 1″ pieces)
  • 1 T vegan margarine
  • 2 t minced garlic
  • 1 t Tabasco (optional – I just serve this at the table)
  • 2 T chopped fresh cilantro leaves
  • 1/2 t cajun seasoning*

Steam cauliflower (I microwave them), but leave them slightly underdone.  Melt margarine in skillet on high.  Get that pan hot.  Add garlic and toss 30 seconds.  Add cauliflower.  Cook ~ 4 minutes until cauliflower is slightly browned, turning down the heat to medium if necessary.

Remove from heat and gently mix in remaining ingredients.

Make sure cauliflower is not overcooked before frying and that the pan is hot.  Otherwise the cauliflower will end up soft and mushy.

* Cajun seasoning: I use something I bought which is very salty and pretty darn spicy.  I found this recipe for Prudhomme’s own mix on a website.  Give it a try!

4 Tbsp. salt
2 Tbsp. + 2 tsp. paprika
2 Tbsp. garlic powder
2 Tbsp. onion powder
2 Tbsp. dried basil leaves
4 tsp. dried thyme leaves
4 tsp. black pepper
3 tsp. dried oregano leaves
2 tsp. white pepper
