Couscous Salad

001This is from The Accidental Vegan by Gartenstein.  She says it serves 6 but I would say more, at least 8.

Boil 3 c water and pour it over:

  • 2 c couscous (I use whole wheat)

Let it soak 10-15 minutes, until the water is absorbed.  Add and mix:

  • 1 c frozen peas
  • 1 c grated carrots
  • 1/4 c chopped fresh parsley
  • 1/4 c chopped almonds
  • 1 t ground cumin
  • 1 t dried mint
  • 2-3 T fresh lemon juice
  • 2 T olive oil
  • 1 t salt
  • 1/2 t pepper
