Grilled Potato Medley

This is from “Totally Vegetarian” by Toni Fiore.  Podcast.  For me, it took WAY longer than 10 min to cook.  Others suggested microwaving the vegetables first.  You decide.

  • 2 lb. baby potatoes, halved
  • about 2 peeled carrots, bite sized chunks (I used a handful of baby carrots uncut)
  • 1 sweet onion, sliced and quartered
  • fresh herbs, minced (try sage, oregano, parsley)

Put in bowl, toss with olive oil, salt and pepper.  Wrap veggies in aluminum foil.  Grill about 10 min (see note above) until fork tender.  Turn out onto grill.  When they’re nice and brown, they’re done.
