King Cabbage

This is adapted from Lean, Luscious, and Meatless by Hinman and Snyder.  It is our favorite way to have cabbage.  Microwaving or cutting short the baking time doesn’t really work.  Use any number of slices you want, just in a larger (wider) dish – pile up more than two layers and it might not cook through.  Here are the amounts for one slice:

  • 1″ cross-section slice of a regular-sized cabbage
  • 1 t sugar
  • 1/2 t caraway seeds
  • salt and pepper

Lightly oil a casserole the size of your cabbage slice.  Sprinkle on the other ingredients and bake covered at 350 for 1 hour.  You can add a little water either at the beginning or if it starts to brown, to keep things from burning.  It would probably be fine to layer the slices, just sprinkle each slice with the above.

To serve, I just cut the slices with a fork and sharp serrated knife, and serve plain right in the casserole with a serving fork.  I want people to be able to get some cabbage neatly onto their plate.

The original recipe called for onion slices as well, but I never bother.
