Mashed Potatoes

These are easy and wonderful.   From Veganomicon by Moskowitz and Romero.  Serves 4-6

  • 2 lbs. potatoes, in 1″ chunks, peeled or not
  • 1 T margarine
  • 1/2 c potato cooking water.
  • 2 t salt
  • ground pepper

Put potatoes in large pot and cover with water.  Boil/simmer 20 min or until soft.  Drain, reserving some of the water.

Add the remaining ingredients to the potatoes and mash with a potato masher or handheld mixer.

Adjust ingredients to taste.


  • Add 2 to 3 T: pesto, finely chopped chives, parsley, OR roasted garlic
  • Whisk 1 to 2 T wasabi powder or curry powder into the liquid (milk/water) before adding
  • Reduce margarine for lower-fat
