Messy Rice

This is adapted from Veganomicon by Moskowitz and Romero.

  • 1 T canola oil
  • 1/4 c chopped onion
  • 2 t whole coriander seeds, crushed (they said not to use pre-powdered stuff.  I crushed some in a small bowl with the back of a spoon but the pieces were annoying in the final dish.  Maybe grind them in a coffee grinder.)
  • 2 cloves garlic, minced
  • 2 T tomato paste
  • 1/2 t salt
  • black pepper
  • 1 c rice (they suggested Jasmine, I used brown)
  • 1-1/2 c water (maybe this is how much you use for Jasmine, but I should have used 2 c water for that much brown rice, maybe a bit less due to the other ingredients)

In a medium saucepan over medium heat, fry onions 5 min.  Add  coriander and garlic and fry 2 min.  Add tomato paste and stir it around, then add remaining ingredients and stir.

Cover and bring to a boil.  Stir and set the heat as low as possible.  Cook rice according to package directions (Jasmine they said 35-40 min, brown = 40).  When rice is tender, fluff and serve.
