Quinoa Pilaf

This is from Vegetarian Times, as demonstrated on Toni Fiore’s Totally Vegetarian.  Serves 4.

  • 1-1/4 c water
  • 3/4 c quinoa, rinsed in seive to remove bitter-tasting saponin

Boil water and add quinoa and a little salt.  I also added some veggie bouillon paste.  Simmer 10-15 min until tender.  Watch water level and add more if necessary.

Add:

  • 1-1/2 T fresh parsley or any herb
  • sprinkle of olive oil.  Toni used a less-flavored oil than cold-pressed
