Rosemary Roasted Sweet Potatoes

Rosemary Roasted (White and) Sweet Potatoes

This is from The Global Vegetarian by Solomon.  Serves 4.

Preheat oven to 375.  In a large mixing bowl, toss:

  • 2 cloves garlic, minced
  • 1 T olive oil
  • 2 T chopped Rosemary leaves
  • 1/4 t salt
  • 1/8 t cayenne pepper
  • 2 medium unpeeled sweet potatoes, scrubbed and diced

Spread on a baking sheet and sprinkle with:

  • 1/2 t paprika

Bake 35 min.
