Spanish Rice

This is probably like any other Spanish rice recipe, but I wasn’t peeking when I made it up, inspired by “Mexican Millet” in Veganomicon by Moskowitz and Romero.

Saute 5 min in a med saucepan on med heat:

  • 2 T oil
  • 1 small yellow onion, finely diced
  • a sprinkle of red pepper flakes

Add and saute another 5 min, stirring frequently, turning down heat if necessary:

  • 1 clove garlic, minced
  • 1/2 a red pepper, finely diced
  • 1 c (raw) brown rice
  • 1/4 t salt
  • 1/2 t ground cumin

Add and boil then simmer 40 min:

  • 2 c vegetable broth
  • salt to taste

Add and toss:

  • 2 T finely chopped cilantro

Their suggestion to garnish with lime juice and diced tomato sounds good.
