Spanish Rice

Lima Beans, King Cabbage, Brown Jasmine Rice, and Spanish Rice
This is from The Accidental Vegan by Gartenstein.
- 2 c veggie stock
- 1 c brown rice
- 1 tomato, chopped
- 1/2 t salt
- 1 t paprika
- 1/2 t oregano
- cayenne to taste
Bring water to boil in a small pot. Add all ingredients and cook until rice is tender, 30-40 min, adding a little water if necessary.
