This is a great summer salad, made from cracked wheat.

  • 1/2 c bulghur wheat
  • 1 tomato, finely chopped
  • 1 clove garlic, minced
  • 1 T olive oil
  • 1 t lemon juice
  • 1/4 t salt
  • 1/4 t pepper

Optional: peeled, chopped cucumber; mint; parsley

Boil 1 c water, pour over bulghur and let sit 1/2 ht or more.  Test it to be sure it’s done before draining.  If it’s not working out, you can microwave it, but usually it’s fine.  Drain.

Mix in all other ingredients TO TASTE.  Chill if you want, but I like it warm.
