Tomato-Cucumber Salad

Cucumber-Tomato Salad

This is an Indian recipe.  I don’t know where I got it, as it’s been in my recipe box for at least 15 years.

It is so fresh-tasting, but I don’t bother if I haven’t got really ripe summer veggies and fresh lemon, mint, etc.  Have it with all tomatoes, all cukes, or a mix.  Dressing is enough for one medium cuke or two tomatoes I guess.  It may seem a bit dry when you first toss it, but with the salt, the vegetables will make their own juice, then you could re-toss just before serving.

  • 1-1/2 t ginger (I omitted this this time, but I think I usually use fresh – you could try the powdered stuff to taste)
  • 1 T chopped fresh mint leaves
  • 1-1/2 T fresh lemon juice
  • 1-1/2 t sugar
  • 1/4 t salt
  • black and red (cayenne) pepper, to taste

Mix up and pour over peeled and slice cukes and/or wedged tomatoes.
