Wild Rice Pilaf with Apples and Pecans

Wild Rice Pilaf with Apples and Pecans

This is from Vegetarian Celebrations by Atlas.  Serves 8-10.

Bring 3-3/4 c water to boil in a medium saucepan.  Add and simmer 40 min:

  • 2/3 c wild rice
  • 2/3 c brown rice
  • 1 t seasoned salt

Saute in a very large skillet until golden:

  • 2 T margarine
  • 1 c chopped red onion
  • 1/2 c finely diced celery

Add and saute 5 min:

  • 2 apples, cored and diced

Add and saute 5 min:

  • the cooked rice
  • 1/3 c orange juice (about 1 orange)
  • 1/4 c dried currants
  • dash of cinnamon and nutmeg
  • pepper to taste

Stir in:

  • 2 T finely minced fresh parsley
  • 1/2 c finely chopped pecans
