Asian Greens and Tofu Soup

Asian Greens and Tofu Soup

This recipe is from 150 Vegan Favorites by Jay Solomon.  My kids really like this.

Saute in a large saucepan over medium-low heat 5 min:

  • 1 T peanut or canola oil
  • 1 med yellow onion, chopped
  • 2 med carrots, peeled and thinly sliced on the diagonal
  • 2 cloves garlic, minced
  • 2 t minced fresh ginger root

Add, bring to simmer on high, then simmer on low 15 min:

  • 6 c veg broth
  • 1/4 c soy sauce
  • 2 t rice vinegar
  • 1-1/2 t sesame oil
  • 1/2 t pepper

Add and cook 5 min:

  • 4 c mixed greens, such as bok choy, spinach, or Chinese or napa cabbage

Add and cook 5 min:

  • 1 lb. fresh or microwaved firm or extra-firm tofu (the refrigerated kind), 1/2″ cubed
  • 1 c frozen peas or snow peas

Let stand 5 min.
