Barley and Wild Rice Soup

Edamame, Swiss Chard, Corn Stick, Barley and Wild Rice Soup

This is from 150 Vegan Favorites by Solomon.  Serves 6.

In a large saucepan over med. heat, saute 8 min:

  • 1 T oil
  • 12 oz. sliced white mushrooms
  • 1 red bell pepper, seeded and diced
  • 1 med. yellow onion, diced
  • 2 cloves garlic, minced

Add and bring to boil, then simmer 10 min:

  • 6 c water
  • 1/4 c barley
  • 1/4 c wild rice
  • 1/4 c dry white wine

Add and cook 35 min:

  • 1 med sweet potato, diced
  • 2 t oregano
  • 1/2 t thyme
  • 1/2 t salt (I end up adding more, or adding veg bouillon paste or cube)
  • 1/2 t black pepper

Remove from heat and let stand 5-10 min.
