Curried Squash with Winter Greens Soup

Curried Squash with Winter Greens Soup and Coiled Rye Rolls

This is from 150 Vegan Favorites by Solomon.

Fry in a large saucepan over medium heat 5 min:

  • 1 T canola oil
  • 1 large onion, diced
  • 2 stalks celery, diced

Add and cook 3-4 min:

  • 2 large tomatoes, diced
  • 3-4 cloves garlic, sliced
  • 2 t minced fresh ginger root
  • 1 T curry powder
  • 2 t ground cumin
  • 1 t ground coriander
  • 1 t salt
  • 1/2 t pepper

Add, boil and then simmer until tender, about 25 min:

  • 4 c peeled, diced squash (butternut or delicata)
  • 5 c water

Add and cook 10 min:

  • 2-3 c chopped greens (swiss chard, etc)

Run through a blender or food processor and serve.
