Apple Wheat Bread, Lentil Soup, and Edmund Fitzgerald Porter

I have a prejudice against Lentil Soup for some reason.  I expect it to taste kind of like mud.  This recipe always takes me by surprise, and I forget just how good it is.  You have to make this.  I don’t remember where I got it.

  • 3 c water
  • 8 oz. dried lentils
  • 1 carrot, finely chopped
  • 1 stalk celery, finely chopped

Bring the above to a boil over medium heat, then set heat to low.  Add:

  • 3 T olive oil
  • 1/2 t pepper
  • 2 cloves garlic, minced

Simmer 1 hour or until lentils are tender.  Add:

  • 1 c tomato sauce (spaghetti sauce)
  • ~ 1 c water, to desired thickness

Salt to taste and cook 1/2 hr.

Cook:

  • 1/4 lb. linguine, broken to 2″

…and add to soup.  Add water if necessary.

When you reheat this, you will probably need to add more water.
