Mighty Minestrone

This is adapted from The Complete Idiot’s Guide to Vegan Cooking.  Hey, look, I’ve been using it!  I had to substitute a lot, but that is why Minestrone was invented.  Serves 8.

Saute on medium 5 min:

  • 2 t olive oil
  • 1 c onion, diced
  • 1 c celery, diced

Turn to low, add and saute 1 min:

  • 2 T garlic, minced

Add, boil, then simmer 25 min:

  • 28 oz can diced tomatoes
  • 3 c vegetable broth
  • 2 c potatoes, diced
  • 3 c chopped cabbage (optional)
  • 2 c cooked beans (I used kidney)
  • 1 bay leaf
  • 3/4 t dried oregano
  • 3/4 t dried basil
  • 3/4 t salt
  • 1/2 t pepper
  • 1 c zucchini, diced small (you might like to add this a little later as it will cook more quickly than the spuds)

Add and cook until tender:

  • 3/4 c small shape whole wheat pasta (optional)

Serve with Cashew Parmesan for topping.

Substitute or add other veggies, such as cabbage, carrots, corn, green beans, peas.
