Yellow Split Pea Soup With Collard Greens and Yams

Yellow Split Pea Soup
This is adapted from Color Me Vegan by Colleen Patrick-Goudreau. We liked it very much.
Saute in a large soup pot on med-low for 5 min:
- 2 T water (more if it starts to dry out)
- 2 yellow onions
Add, turn heat to low and cook 5 min:
- 1 T minced fresh ginger
- 3 cloves garlic, minced
Add and simmer until peas are tender, 1 hour:
- 2 T curry powder
- 1 t ground cumin
- 1/2 t ground mustard
- 1/2 t turmeric
- 1 medium sweet potato (yam), unpeeled, 1/2″ dice
- 1 medium carrot, peeled and diced
- 8 c veg stock
- 3 c dried yellow split peas
Add and cook 10 min:
- 1 bunch collard greens, chopped
Salt and pepper to taste. You can thicken the soup by pureeing a few cups of it before adding the greens.
