Perfect Brownies

I have tried many brownie recipes.  I was searching for one that would be like Duncan Hines, thick and fudgy with that sheen on the top.  Recipe after recipe turned out cakey or weird… until I found this one.  I will never bother with another brownie recipe, ever.

This is one of the variations from Vegan Planet by Robertson.  Get the book and find out how to make it peanut buttery.

Preheat oven to 350 and lightly oil an 8″ square pan*.  In a small saucepan over med heat, melt:

In a large bowl, blend:

Stir in and mix well:

  • 1 c flour (I usually use all-purpose, but tried whole wheat pastry flour once and it was fine)
  • 1 t baking powder

Spoon batter into square pan and bake 20-25 min, until top springs back when touched.  Cool and cut.

* I have a suspicion that a glass pan will make these oily on the bottom = not good.  If you make them in glass and they are oily, give them another try in metal.  I’d also like to hear from you.

* Once I tried them with 1/2 c mushed-up Mori-Nu lite tofu instead of the flax seed and water, and they were OK but did not have that sheen.  Not quite the brownies of my dreams.
